When Good Little Eater closed its doors for the summer in May 2024, Phillip Moffat suddenly found himself at a crossroads. He had worked there for three years as the restaurant’s baker. “I didn’t have anything to do when she closed, so I started baking a little bit,” he recalls. That “little bit” quickly snowballed as his loyal customers refused to let him off the dough hook, demanding more of his bread and baked goods. By late June, Philmo (a nickname given to him by a friend) Bakery was born, complete with a cutout collage logo designed by Phillip himself.
Over the summer, he and his family worked hard to establish his “Bread Shed,” a fully equipped baking haven on his property. Outfitted with an oven, mixer, air conditioning, and other essentials, the shed has allowed Phillip to bake full-time for customers in Stillwater and at the OKC farmer’s market.
Phillip’s love for baking began 24 years ago during a camping trip with his son’s Cub Scout troop, where he first tried his hand at Dutch oven baking. That experience sparked a passion for sourdough, which has since become his specialty. That 24-year-old starter still brings the rise to his breads today.
Phillip’s passion and excitement for baking is visible. He often shares updates about his bakery’s progress on social media, leaping and dancing around his shed like he’s just won a $10,000 grand prize. His menu includes a variety of goods such as gluten-free cranberry walnut bread, banana bread, bagels, scones, cookies, pizza dough—and his famous “Phillip’s Fudgy Brownies,” a customer favorite, all made with sourdough.
Customers can stay updated on Philmo Bakery’s sales through its Hotplate website. Phillip delivers orders in Stillwater every Wednesday from 5–6 p.m. at Good Little Eater.
